US company uses mushrooms to create sweeter chocolate

Company claims technology reduces sugar in chocolate by up to 70 percent.

Scientists in a company in the US state of Colorado have found a new way to reduce the amount of sugar put into products such as coffee and chocolate.

The new innovation includes mushrooms instead of sugar. The product, called ‘Clear Taste’, is an organic bitter blocker. It works to remove bitterness, sourness, and astringency in a wide variety of products.

The advantage of that blocking is to be able to reduce the amount of sugar. Experts say they are actually using the mycelium, that is the root structure of the mushroom which typically grows underground.
